    Our Loin Medallions are deboned and cut from the center of the loin. Thin enough to be pan seared and thick enough for the grill pan or broiler, they are always on the menu.

    The richest part of the loin, our Rack Roast is carefully removed from the bone - which is then inverted to serve as a catch basin for all the natural juices, and ultimately tied for ease of preparation and for guidance during carving.

    Moving a bit down the plate on the carcass, we find our way to a meaty rib section. Created from the more common place “spare ribs”, we quarter off the best section of the ribs for your eating pleasure.

    Produced only from the rib section of the loin, our Solid Bone Chops are best two at a time, as one is just never enough.

  10. Includes one 1.5 lb piece

    One of our favorites. Young to old, all are almost sure to reach first for this classic. Carved out from the loin, our Back Ribs will take as well to fire as they will to slow cooking. Season or sauce to taste and enjoy.
